This guidance provides information about ways to produce safe Lebanon bologna products under Hazard Analysis Critical Control Points (HACCP) systems. It applies to official establishments that produce Lebanon bologna and the actions the may take to reduce product contamination by E. coli O157:H7. It relates to 9 CFR Part 417.
